So I have something to confess. I’m somewhat of a croissant fiend. I LOVE almond croissants. Like I’m borderline attracted to almond croissants.

So, what happens when you take something that’s already absolutely delicious and soak it in a custardy french toast mixture, and bake it up with toasted nuts and drizzle it with maple syrup. Just use your imagination.

What do you need to make almond croissant french toast bake?

The beautiful thing about french toast bakes is that you can make a really scrumptious, decadent, beautiful dish to serve a crowd with just a few ingredients. Here’s what you’ll need:

  • Almond Croissants: I recommend using almond croissants because they’re filled with amazing almond filling that’s the best thing I’ve ever eaten. Heh. But you can also use chocolate croissants, pistachio croissants, or plain croissants for an equally delicious french toast bake.
  • Granulated Sugar: I like to smother my french toast in powdered sugar or maple syrup, so we did not use much added sugar in this french toast bake. This will allow everyone to decide how sweet they take their french toast.
  • Milk: I prefer to use a higher fat milk to keep this almond croissant french toast bake rich and buttery, but any kind will work! Almond milk also adds a lovely, deeper almond flavor if you’re dairy free.
  • Eggs: Any delicious french toast recipe needs eggs!
  • Almond Extract:A splash of almond extract will add almond flavor all throughout.
  • Salt:All sweet treats need salt to cut the sugar and deepen the flavor profile.
  • Almonds:Some slivered almond will give your almond croissant french toast a lovely crunch.

This almond croissant french toast is one of those super simple recipes that tastes like a highly trained French pastry chef whipped it up in a marble kitchen. You know the type. And yet, in reality a child could make this. Which is pretty much my favorite kind of recipe.

But even simple recipes can be made better with just a few quick tips. Here they are:

  • Use good croissants: This almond french toast recipe is very simple to make and calls for basic ingredients. Because of this, the quality of your ingredients will really shine through. I prefer to make this with old croissants from a good bakery rather than the regular ol’ kind you find in the grocery store. Many bakeries sell their stale pastries at super discounted prices, so you can get a bunch of them for pretty cheap!
  • Make sure your croissants are a little stale:Slightly stale bread will soak up your french toast liquid like a sponge which will lead to a custardy, melt in your mouth, buttery almond french toast.
  • Let the french toast bake soak:The longer you let the french toast bake soak the more time the croissants will have soak up all that egg-y, almond-y goodness.

Ingredients

  • 9 almond croissants (preferably stale)
  • 1/2 cup granulated sugar
  • 3 cups milk
  • 5 eggs, room temperature
  • 1 1/2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup sliced almonds

Instructions

    1. Preheat the oven to 350°F. Generously butter a 6 to 8 cup baking dish (we used an 11 x 7 inch casserole dish, but you can use whatever you have on hand).
    2. Cut your croissants in half and arrange them around each other, tucking them under one another to tightly pack them into your baking dish. Set aside.
    3. In a large mixing bowl combine the sugar and eggs. Use a whisk to thoroughly mix until completely hom*ogenous. Stream in the milk, whisking until completely combined. Add the almond extract, vanilla extract, and salt. Stir to combine.
    4. Pour the mixture evenly over the croissants to equally drench them all. Sprinkle the croissants with the sliced almonds. Cover with tinfoil or plastic wrap and place in the fridge for at least an hour, but up to overnight to allow the mixture to soak in.
    5. Bake for 30 to 40 minutes or until the french toast has puffed up and is golden brown along the edges.
    6. Allow the french toast bake to cool slightly before serving. Serve with maple syrup, a dusting of powdered sugar and fresh fruit.

    Notes

    1. You can also use regular croissants or a different flavor if you’d rather. This would also be delicious with pistachio, chocolate, or plain croissants

    2. Hi! I am re- reading this delicious recipe and I noticed two things. You don’t need to preheat the oven until you are ready to bake the French Toast. Step 1 says preheat the oven and step 4 says refrigerate for at least an hour. Step 5 should be preheat your oven when ready to bake. Also, vanilla extract is not in the ingredients list but mentioned in one of the steps. How much vanilla extract should be used? Thank you for your help!
